I invented this soup last week when Jim, Tate and I all had bad colds and were miserable. Being vegan, we couldn't enjoy chicken noodle soup (one of my previous favourite comfort foods) so I decided to make something to replace it. It turned out so well, we've had this soup multiple times since then. And we're all cold-free. Whether it was the soup that cured us or not, I guess we'll never know...
1 large onion, sliced thin
1 cup peeled, thinly sliced carrots
4 cloves garlic
1-2 cups celery, sliced thin
1 tsp dried thyme
1/2 tsp dried rosemary, crushed between your fingers
1/2 tsp ground black pepper
1-2 tsp sea salt
2 tbsp white cooking wine (optional)
8 cups veggie broth (I use water + vegetable bouillon, it's far more economical than buying ready-made broth)
1 can chickpeas, rinsed and drained
1 cup orzo noodles (cooked seperately)
1. Saute onion and carrots in olive oil for about 10 minutes.
2. Add garlic, celery and spices, saute for another 5 minutes.
- While the veggies are cooking, prepare your orzo noodles (or whatever type of noodle you'd like) in a seperate pot and set aside.* -
3. Use the wine to deglaze the pot (or use water if you'd prefer).
4. Add the veggie broth and chickpeas, bring to a boil.
5. Reduce heat to low-medium and let simmer for about 15 minutes.
6. Serve with noodles!
*I like to keep my noodles seperate because otherwise they soak up all the broth, and I'm left with stew the next day for leftovers. However, if you like lots of noodle and less broth, throw 'em in!

Welcome!
Hey y'all!
I decided to start this blog because I really missed my health and wellness pregnancy blog, and I've been accumulating all kinds of wellness wisdom from my studies that I want to share! I'll be writing about all aspects of optimum holistic health from diet to meditation to the perfect poop. I'll also be posting a new recipe every week from our escapades in the kitchen (and trust me, it won't make the cut if it's not delicious!)
